My brother loves eggnog. Ever since we were kids it’s been in our house during the holidays and part of our tradition. To be honest, I’ve never been a big fan. I find it too heavy and perhaps a little too decadent (is there such a thing?). Plus, the pesky allergy to milk makes it a bad choice for me anyway.

But, I do love nut milk and nutmeg. And rather than sit out the enjoyment, I decided to put my own spin on this holiday favorite. Can non-alcoholic, dairy-free, egg-free “eggnog” actually be good? Yes! It’s got the creaminess of cashew milk that I love, plus all the best holiday spices to make it feel like a special treat.

Some ways I love to enjoy Holiday Nutnog:

  • In a festive glass garnished with a cinnamon stick

  • In coffee or tea for a creamy holiday pick-me-up (or in Herbal Coffee)

  • As a base for chia pudding and overnight oats

  • On top of oatmeal

Ingredients

  • 1 C raw cashews

  • 2 ½ C filtered water

  • 1 date

  • 2 tsp vanilla extract

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • ¼ tsp cardamom

  • ¼ tsp allspice

 

Instructions

  • Soak the cashews overnight, or for at least 1-2 hours. (If you forget or don’t have the time, pour boiling water over the cashews and let sit as long as you can.) Make sure the water covers the cashews completely.

  • Drain and rinse the cashews and put them in a high-speed blender.

  • Remove the pit from the date and add it to the blender. (Tip: If your date has hardened, throw it in with the cashews to soak and soften.)

  • Pour in the filtered water

  • Add vanilla extract

  • Add all of the spices

  • Start to blend on the slowest speed. Gradually turn up to the highest speed and blend for about one minute.

  • Taste and add more spices if you’d like

  • Pour into a festive glass, sprinkle with a touch of nutmeg and garnish with a cinnamon stick

  • Store the rest in the fridge. There are no additives, so it will separate. That’s normal. Just give it a good shake before you pour. Lasts about 5 days, or until you drink it all up.
